About Us
Our Story
When our founder, Marc Glosserman, was growing up, on each of his birthdays his mother would make him a birthday meal consisting of his favorite foods. Inevitably Marc would ask for fried chicken and French fries. Having been raised in Texas, Marc’s mom was skilled in the ways of southern cooking. Her chicken was not any ordinary chicken either – it was a recipe that had been given to her by her mother-in-law, Mama Els, in which the skin was removed from the bird, seasoned, battered and rolled in a breading of crunched up crackers. A birthday meal was not complete unless apple pie, made by Marc’s other grandma, Betty, shipped from Texarkana was served warm with a big scoop of vanilla ice cream for dessert.
Our Inspiration
Hill Country Chicken is inspired by its founder's childhood memories and his passion for the Texas-style home cooking of his mother and grandmothers, Betty and Mama Els – hearty, crave-able comfort food served lovingly, casually and unpretentiously by people with big smiles.
This spirit embodies our restaurant’s service philosophy and guest experience.
